  1. Take 70 g whole wheat flour

  9. Get 120 ml milk (or 1/2 milk 1/2 yogurt)
  10. Prepare melted butter for brushing scones

I recommend serving these scones warm with butter and jam even though they're savory, since the sweetness of jam makes a lovely contrasting. Dill is one of my favourite herbs ever- so fresh and green! Line a baking sheet with parchment paper. In a liquid measuring cup, stir vinegar/lemon juice into milk and then set aside.

  1. Preheat oven to 200°C/400°F.
  2. Mix flours, baking powder, salt, and sugar in a bowl.
  3. Shred or cut the cheese into small cubes and add to bowl.
  4. Finely chop dill and add it to the bowl as well. Add caraway seeds if using too.
  5. Mix lightly, then gently mix in the milk. Instead of stirring or kneading, use a cutting motion with your spatula or spoon to mix in the milk until incorporated to help keep the dough fluffier.
  6. Once everything is incorporated into the dough, gently form into a ball and place on a floured surface/cutting board.
  7. Cut the dough into 4 equal pieces. I like to cut mine into triangle shapes.
  8. Place scones onto a baking sheet. Melt butter and brush the top of each scone.
  9. If you like, sprinkle a little bit of ground pepper on top too!
  10. Bake for about 15 minutes at 200°C/400°F. Remove from oven and cool for a few minutes on a rack. Dig in!

Halve and deseed the cucumber, slice thickly, then toss with the vinegar, onion and chilli. When ready to serve, tear remaining dill over the relish. Split scones, spread with soft cheese and top with a ribbon of salmon and a little relish. Add cheese or herbs to the batter to make savoury scones. Or, add orange or lemon zest; dried raisins, dried blueberries, currants, dried cranberries, or other dried fruit, that have been plumped in hot water and drained.
