Soak the sun-dried tomatoes in the water until soft. I'm not the biggest fan of meatloaf but I liked the veggie addition. Heat the oil in a large saute pan over high heat. It is extremely filling, has less than half the calories of regular meatloaf, and tastes delicious. It is always a huge hit in my house.
