A simple, homey dish of cabbage cooked with tomatoes and ground beef with a few simple seasonings will remind you of home. This Beef and Cabbage Stir Fry goes great with: Easy Egg Drop Soup, Thai Cucumber Salad, Savory Coconut Rice, Pork Gyoza. Beef Alternatives: I happened have a half pound of beef in my freezer leftover from my Baked Beef and Black Bean Tacos, so I used that as the meat component for the stir fry.

The ingredients needed to make Beef and cabbage:
  1. Prepare 2 carrots
  2. Get Medium onion
  3. Get Tomatopaste
  4. Prepare 1 handful French beans
  5. Prepare Half conget
  6. Get Cilantro for garnish
  7. Take Half cabbage
  8. Take Crushed Ginger and garlic
  9. Take 1/4 cup oil
  10. Take 1/2 kg beef

And last week, we got dumped with snow. And… This beef and cabbage casserole can be stored, unbaked, for up to two days in the fridge. Add the cheese in the last few minutes of baking. The casserole can also be frozen.

Instructions to make Beef and cabbage:
  1. Dice the vegetables (conger, carrots and French beans) wash and blanch (bring water to boil add salt and add the vegetables) for a minute then drain and run cold water through them to stop further cooking
  2. Boil your beef with ginger and garlic and some salt
  3. Once the water is dried, add your onions, oil and tomato paste, cook a little more for two minutes
  4. Now take your blanched veges and add to beef, add a little water for soup
  5. In a separate pan fry the cabbage, with oil and onion only, a pinch of salt to taste
  6. I wanted my cabbages a little bit more tender coz I was cooking for the kids, garnish with cilantro
  7. Serve hot and enjoy, you can have it with chapati, roti, rice or better still enjoy it as a whole meal

Follow the recipe as written, but don't preheat the oven and line the casserole dish with plastic wrap. This is an 'Irish' way to deal with the leftover corned beef after the American corned beef and cabbage feast. My husband considers this a wonderful part of the corned beef cycle. I use red potatoes with skins on, substitute ham for the corned beef, and leeks for the green onions, depends on what's in the fridge. Cabbage, beef, carrots, onions, garlic simmered on the stove create this delicious one pan meal.
