In a frying pan add sum ghee and using a ladle add one ladle of mixture to the pan and spread out and cook a few minutes till mixtire is no wet then flip once flipped add a hand full of mozzarella and sprinkle and then fold and cook on each side till mozzarella has melted and then enjoy the batter depends on how thick you make can yield 10 pancakes

Sprinkle half of cheese over filling on crepes; roll up crepes. Ginger & spinach crepes are topped with mushrooms, tomatoes, pepper & onion. Great dish for brunch, lunch or light dinner!
