This recipe is a slow cooker adaptation of my original, family favorite, stove-top marinara sauce explained in a previous post. With a few tweaks to my original recipe, this easy sauce gets even easier in the slow cooker. Also great with baked pasta recipes, eggplant parmesan, french bread pizzas or when I need a quick dipping sauce for zucchini sticks, mozzarella sticks or anything you like to serve with sauce. I'm really picky with the brand of tomatoes I use, I always get the best results with Tuttorosso. (green label), but if you have a favorite brand you are loyal to, feel free to use it.

Steps to make Quick Rustic Basil Marinara Sauce:
  1. Heat oil in a large 3qt. saucepan
  2. Add the onions, (carrots, if desired), (red pepper, if desired), basil, and salt, and simmer on low until the onions are translucent. This is important for sweetness; make sure the onions are translucent.
  3. Add the whole peeled tomatoes, turn up the heat to high, and cook covered for about five minutes. If you cook uncovered, it will burn.
  4. Reduce heat back to low, and mash the tomatoes aggressively with a metal masher (plastic will leech into the sauce).
  5. From here, we have options. If you are looking for a very loose, heterogenous sauce in a hurry, salt to taste and serve now. Otherwise, go to the next step.
  6. If you are serving with a noodle, then you likely want a looser sauce, so keep stirring and mashing for a while, until the sauce is more homogenous. This could be quite a while. Add the water, as needed to thin it out. Salt to taste, and serve.
  7. Alternatively, if you are looking to use the sauce for pizza or macaroni (pasta that is short and not a noodle), then you need to thicken it up. Add the tomato paste, and then stir, and then thin as desired with a little of the water. Salt to taste, and serve.
  8. And if you are just looking to stretch it, add the tomato paste, simmer it all together until you reach the desired consistency, add the water, stir, and reduce to the desired consistency. Salt to taste, and serve.

In a large, deep skillet over medium heat, heat oil. That's why the photos are of smooooth sauce. Give it a few, quick whirs to break up the tomatoes a bit. The great thing about making your sauce is you get to choose! Extra tip - If you like a fairly chunky sauce, it's nice to mince up the onions fairly finely.
