  20. Prepare 1/2 cup rosemary concentrate

  24. Get 2 large carrot, cubed

For extra fibre I sieve Exe Brown Bread Flour to separate the fibre from the flour then grind the fibre some more in a spice grinder so I can put as much fibre as I need. Steps to make Deconstructed Githeri:
  1. For bean balls, mash the beans.
  2. Reduce the beef broth until it is very concentrated and mix into the bean mash.
  3. Slice the onion and caramelise it in oil, then mix into the mash.
  4. Add all the other ingredients to make the final mash. If it is too soft, add some extra mashed beans to solidify it. Check seasoning.
  5. Make balls and bake in the oven till well set. (Remember all the ingredients except egg are cooked so you don't need much time).
  6. For the ratatouille, suet the minced ginger in some oil.
  7. Blend the tomatoes and add to the ginger.
  8. Add the herbs, spices and seasoning.
  9. Boil until the tomato sauce reduces to a thick liquid.
  10. Add the cubed carrots and cook until a bit soft.
  11. Add the zucchini and cook for a few minutes.
  12. For maize pancake, blend the maize in the milk.
  13. Mix with wheat flour, salt, and water to make a very thick batter.
  14. Cook the maize batter in a pan like pancakes.
  15. Combine the components by putting the bean balls and maize pancake on the plate and taking some of the tomato sauce from the ratatouille to coat the bean ball then the vegetables to the side.
  16. Or you can flatten the bean balls and make a vegetarian burger. Here I made a sandwich by using two slices of the maize pancake, putting a flattened bean ball in the middle, and putting the ratatouille tomato sauce as sandwich dressing.

Also, don't be throwing away liquids that you use to blanch or boil vegetables and other foods - they are packed with nutrients that leached from the said vegetable or food. Githeri is a corn and bean one pot meal which originated from the Kikuyu tribe of Kenya. It is also known as muthere or mutheri. It is traditionally prepared with dry beans and corn, however, to prepare this amazingly delicious recipe, I used canned beans and frozen corn for ease and convenience; so, it is perfect for those times when you need to whip something healthy up quickly. Adapted from an old Kenyan recipe, Githeri features slow-cooked corn and beans, gently simmered in a fragrant and spicy coconut milk base.
