  8. Get Salt

  11. Make ready 1/2 tsp cumin seeds
  12. Take 3 Curry patta leaves

Mix half a spoon of roasted cumin seed powder and half a spoon of coriander in the raita. To make this raita, prick brinjal all over with a fork or skewer. The direct roast the brinjal over gas flame or in an oven till soft. When done, allow it to cool and finely chop in a bowl.

Instructions to make Baigun/ Brinjal Raita:
  1. Finely chopped onions, green chillies and coriander leaves.
  2. Wash Brinjals, cut into thin slices and dip them into salted water for 2-3 minutes.
  3. Take a oil in a fry pan and shallow fry Brinjals slices. Take out in a plate and sprinkle Chaat masala on both sides.
  4. Beat yoghurt, add onions, green chillies, coriander leaves, salt, chilli powder, cumin powder and Brinjals slices. Mix it well.
  5. At last take oil in a fry pan, add round red chillies, cumin seeds and Curry pattas. When they changed their colour, immediately give tarka on yoghurt.
  6. Your Brinjals Raita is ready to serve.

In a large bowl, beat curd till it gets smooth. Add all the other ingredients, leave a little coriander. Smoky and cooling eggplant raita which goes well with biryani, pulao or even some hot phulkas, I loved the smoky taste of the dish and it taste so refreshing too. I wanted to make this dish for quite a long time. I have made it before but i didn't take pictures.
