This is one of my family favourites and we love to serve the Palak Raita, as a salad or along with Parathas or as a side dish along with a main course meal.   1. Boil water in a wok. Then add the spinach leaves. Let it boil for 3 to 4 minutes.
  2. After 3 to 4 minutes strain the spinach leaves and put them in the chilled water.
  3. Take a blending jar & add boiled spinach leaves, green chilli, black salt & mango Ginger. Blend them and then take aside.
  4. Heat oil in a pan. Add cumin seeds and turmeric powder to the hot oil. Then switch off the flame. Add this Tadka (tempering) to the blending stuff. Mix it well.
  5. After mix, raita is ready to serve.

But somehow I like my spinach raita on the thicker side. You can adjust the consistency to preference. Healthy Spinach Raita is the perfect accompaniment to Indian meals.
