Chorizo Quesadilla - very good combination - In this recipe the classical Mexican quesadillas are going to be complemented with an ingredient that comes from the Spanish cuisine "the chorizo". The quesadillas consist of corn tortillas (they can also be made of flour tortillas) that are folded in half and melted cheese is put in the middle. Cover half the tortilla surface with shredded cheese, bits of chorizo or andouille, and chopped scallions.

Steps to make Chorizo Quesadillas:
  1. In a medium pan add olive oil, and chorizo on medium heat. Using a spatula break the chorizo link up until it resembles ground beef.
  2. Add in onions and bell peppers and cook got 5 minutes. Stiring occasionally. Add lime juice and cilantro, and turn heat down to low.
  3. In a large pan on medium-low heat, add tortilla (1 at a time) and spread 1/3 of the chorizo mix onto half of the tortilla. Top chorizo mix with cheese, and gently fold tortilla in half.
  4. Cook on each side for 2-3 minutes, or until golden brown.
  5. Slice quesadilla's into quarters and serve with your favorite toppings. I used fresher sliced avocados, roma tomatoes, sour cream, and my favorite herb… cilantro, along side with sliced limes…. I eat them with everything fyi!

Using a fish slice, turn each one over. These Potato and Chorizo Quesadillas are the perfect snack, appetizer or light lunch/dinner. Serve them with sour cream and your favorite salsa and you'll be good to go! Let's start by sautéing the onions in a bit of oil until softened, and just beginning to brown. Add in the potatoes and cook until they've browned as well.
