Pesarattu is a protein packed healthy breakfast made using whole green gram and spices. It is one of the most commonly eaten Breakfasts from Andhra cuisine. In most Telugu speaking traditional households, pesarattu is eaten with this allam pachadi.

Pesarattu is one of the most well liked of recent trending foods in the world. It is enjoyed by millions daily. It’s simple, it’s quick, it tastes yummy. They are fine and they look fantastic. Pesarattu is something that I’ve loved my whole life.

The ingredients needed to make Pesarattu:
  1. Prepare whole moong with skin (soaked overnight)
  2. Get rice (soaked overnight)
  3. Prepare small onion chopped
  4. Get ginger
  5. Prepare green chillies
  6. Prepare coriander leaves
  7. Get curry leaaves
  8. Prepare Other ingredients
  9. Get Oil
  10. Take onion sliced
  11. Prepare large potatoes boiled and crumbled roughly
  12. Get jeera

  14. Get roughly crushed dhania
  15. Prepare haldi
  16. Take garlic crushed
  17. Take ginger grated
  18. Take Some coriander leaves
  19. Prepare green chillies chopped
  20. Get lemon juice

They are Vegan as well as Gluten-free. Pesarattu is a dosa made with Pesara Pappu (moong dal). You use the moong dal with skin on and this is what gives this dosa the classic green color. Of course this dosa is high in protein and fiber.

Steps to make Pesarattu:
  1. Strain and grind together the whole moong, rice, onion, green chillies, coriander, curry leaves and ginger with some water to get a smooth paste. Add salt as per taste. No need to ferment.
  2. Preparing aloo bhaaji : heat oil and add zeera, Rai, dhania and green chillies. Let them splutter. Now add the sliced onions and ginger and garlic. Saute well.
  3. Add haldi and cook till onions are translucent. Add masher aloo and salt and cook for some time. Lastly add lemon juice and coriander leaves and mix well. Set aside.
  4. Heat a non stick pan. Smear some oil and wipe the pan. Pour ladle full of batter and spread with the back of the ladle. Cook the pesarattu on medium to high flame till crispy. Place some aloo bhaaji in the centre and roll into cylindrical shape. Remove and serve hot. With tomato chutney.

Serve it with upma rolled inside and it becomes an 'MLA pesarattu'. For making Pesarattu: Heat the dosa griddle until medium hot. Add ⅓ cup batter and swirl to completely cover the dosa griddle. Sprinkle ¼ teaspoon of oil or ghee to the pesarattu. Cook until underside of the pesarattu dosa is golden brown.
