Pesarattu is a protein packed healthy breakfast made using whole green gram and spices. It is one of the most commonly eaten Breakfasts from Andhra cuisine. In most Telugu speaking traditional households, pesarattu is eaten with this allam pachadi.

The ingredients needed to make Pesarattu:
  1. Get whole green moong dal
  2. Get rice
  3. Make ready chana dal
  4. Make ready methi/ fenugreek seeds

They are Vegan as well as Gluten-free. Pesarattu is a dosa made with Pesara Pappu (moong dal). You use the moong dal with skin on and this is what gives this dosa the classic green color. Of course this dosa is high in protein and fiber.

Steps to make Pesarattu:
  1. Rinse moong dal, chana dal and rice well. Soak whole moong dal, rice, chana dal and fenugreek seeds for 5 to 6 hours or whole night.
  2. Then grind all ingredients together to fine paste including ginger, green chilli, cumin seeds and salt. Add water while grinding.
  3. Mix the batter well. Add water if required to get dosa batter consistency.
  4. Pour a ladeleful of batter on hot tava. Spread it into a circular motion.
  5. You can sprinkle dry curry leaves chutney, finely chopped onion, green chilli over it. Apply some butter or oil if required.
  6. Cook the Pesarattu on both sides.
  7. Serve hot with coconut chutney.

Serve it with upma rolled inside and it becomes an 'MLA pesarattu'. For making Pesarattu: Heat the dosa griddle until medium hot. Add ⅓ cup batter and swirl to completely cover the dosa griddle. Sprinkle ¼ teaspoon of oil or ghee to the pesarattu. Cook until underside of the pesarattu dosa is golden brown.
