The doughnut-like pastry has a long history of popularity in Kannada, Telugu, Maharashtra, Orissa and Tamil civilization. Adhirasam recipe is a traditional recipe.

  1. Prepare Raw rice flour
  2. Get Unsalted Jaggery
  3. Prepare Water
  4. Get Cardamom powder

  8. Make ready Plastic sheet/Banana leaf

Adirasam (Ariselu in Telugu) is a deep fried Indian sweet made with rice flour and jaggery. My MIL is an expert in making Adhirasam. In my apartment , all my neighbours used to call her for guidance during Diwali. Adhirasam Recipe with step by step photos.

Steps to make Adhirasam Pastry:
  1. In a bowl, sieve the raw rice flour.
  2. In a kadai, add jaggery and water. Keep in medium flame till the jaggery dissolves. Don't allow it to boil too much.
  3. Strain the syrup in a bowl to remove impurities.
  4. Add the syrup to the raw rice flour in batches. Mix well without lumps.
  5. Add the cardamom powder and ghee. Mix well to form a smooth dough like Chapathi dough.
  6. Cover and rest it for 24 hours.
  7. Next day add curd to it and knead well.
  8. In a kadai, add oil. Once the oil gets heat keep the flame in medium.
  9. In a plastic sheet/ banana leaf grease some oil. Grease your fingers with oil and take a small ball out of the dough and press it flat. It must not be too thin. It must be slightly thick.
  10. Put it in oil one by one. You must fry only one at a time. When it gets cooked on one side it will rise up. Using a spatula gently turn to other side and fry for a minute. Do not fry too much.
  11. Take out the adhirasam. Using another spatula gently press it. Squeeze out excess oil. Dont press too much it will break. Repeat the process for each balls.
  12. Transfer it to an absorbent paper. Now it's ready to serve.

A traditional sweet made during Diwali, Nombu and Lakshmi Pooja. It also takes a special place in the "Seer" given to the bride when she leaves for her in-laws home after her marriage and during the "Thalai Deepavali" and "Valai Kaapu". My Grandma used to say that, "If you can make "Adhirasam" well you are half way to becoming a good. Adhirasam is a traditional sweet dish which will be done for most of the festivals.
