  1. Take 4 pieces Rui/Rohu fish (Carp)
  2. Get 1 cup sour yogurt (fresh)
  3. Take 1 large Gondhoraj lime, juice
  4. Prepare 1 tsp roasted cumin seeds
  5. Make ready as required salt & turmeric to coat fish
  6. Get to taste Salt
  7. Make ready 1/2 tsp sugar
  8. Take 4 tbsp mustard oil

Fish is marinated with turmeric, red chili, salt, and mustard oil. The dish is served hot with lime wedges and rice. Posto is an integral part of Bengali kitchen; in fact it would not be wrong to call posto, a raw emotion of Bengali. We, Bengali people love poppy seed so much that we have tied an emotional knot with posto.

Instructions to make Doi Gondhoraj Rui:
  1. Wash the fish and marinate with salt and turmeric
  2. Heat mustard oil until it smokes and fry the fish
  3. Take out fish, and in the same oil add the cumin seeds and let crackle
  4. Quickly whisk the yogurt and pour it in. Season with salt, sugar and turmeric.
  5. Add the fish in, and add half the gondhoraj lime juice. Add 1/3 cup water.
  6. Cover and cook for 3 to 4 mins.
  7. Remove cover, add remaining gondhoraj lime juice, some green chilies and switch off heat.
  8. Serve with steamed rice
