This fish dish needs very little time to cook and can be prepared with very few ingredients. All you need is fresh carp (rohu or katla) as fish pieces are not fried before. Couple of things I changed/substituted are regular canola oil instead of mustard oil and kasoori methi instead of methi leaves (since I didn't have any). Instructions to make Methi mach:
  1. Dry roast the dry fenugreek leaves or dry kasuri methi leaves and crush them with hands.
  2. Wash the fish properly. Marinade with the crushed kasuri methi leaves, garlic paste, green chilli paste, yoghurt and salt. Leave it for at least 2 hours.
  3. Heat oil in a wok. Add the fenugreek or methi seeds. when the methi seeds change its colour to brown take them out of the oil. The oil will now have a strong aroma and flavour of fenugreek seeds.
  4. Add the fish very carefully to the oil. turn down the flame to low. cover and cook for 4-5 minutes. Flip the fish carefully as they are prone to breaking. Cover and cook the other side for another 4-5 minutes on a low heat.
  5. When the fish changes colour to white add the left over marinade. Shimmer for 5 minutes.
  6. Add green chillies slitted in halves. Shimmer for 2 minutes. Serve with steaming hot rice.. Bliss!!!!
