Yam Porridge is made with White/Puna Yam. This method of preparing Yam Porridge is peculiar to the Yoruba tribe of Nigeria because unlike popular Yam Porridge recipes which call for Vegetable leaves, this recipe is without. Yam porridge, which is also known as yam pottage or pottage yam is a popular yam delicacy distinguished by its juicy thickened porridge. Fresh yam pieces in a thick aromatic porridge sauce and finished off with some fresh green spring onions is what this recipe stands for.

Steps to make Yam Porridge:
  1. Blend fresh pepper and tomatoes then set aside
  2. Peel your yam, then cut into cubes
  3. Season your fish with knor and salt then boil
  4. Set your pot on fire, then add palm oil
  5. Allow to heat for few seconds then add sliced onions then saute, add your blended tomatoes and pepper then continue to fry
  6. Add stock cube then fry till dry.
  7. Add your fish stock and more water enough to cook the yam
  8. Wash and add your yam, then cover and allow to start cooking
  9. Cook for a while then add blended crayfish and bonga
  10. Cook till it starts to thicken
  11. Taste and adjust, lower your hear till it thickens to your desired consistency
  12. Add ugu leaves, cook for few more minutes then bring down.

Preparing yam porridge requires peeling the yam, cutting the yam tuber into small thick pieces, then cooking the whitish fleshy starchy part with a collection of selected ingredients. In most of the West African markets and busy roads, yam are usually fried and sold as "street food" or "roadside food". Peel off the bark of the yam, slice to serve-able sizes, wash and set aside. Also slice or grind the tomatoes, fresh pepper and a cup of crayfish. I use lots of onions while making most foods, just for its health benefits.
