Arrange on a large baking sheet. Heat the oil in a heavy-based saucepan over a medium heat. This leek, potato and parsnip soup may not look all that interesting but the addition of the parsnip adds in extra flavour which makes it just a bit more satisfying that a plain leek and potato. In a large skillet, pour vegetable oil to a depth of ½ inch. This time I put them to good use in a classic parsnip and apple soup.
