It's a dish of mackerel simmered in sweet miso sauce. Sadly I can't cook it here in Melbourne because it is too hard to find fresh mackerel. Miso marinated fish is one of traditional cooking method in Japan. I like miso marinated Spanish mackerel.

Steps to make Miso Mackerel Don:
  1. Drain the Canned Mackerel and remove the brine. Make Miso Sauce by mixing all ingredients in a small bowl.
  2. Heat small amount of Oil in a frying pan over a medium heat, cook sliced Onion until transparent.
  3. Add Mackerel and the sauce and simmer over a low heat for a minute or so, and let all well combined.
  4. Half fill a bowl with freshly cooked rice and cover it with the Mackerel mixture. Sprinkle some finely sliced Spring Onion over and serve.

We usually eat it without any sauce because miso has some salt and fishes are already tasty. Simmered Mackerel in Miso is no exception and I usually fillet only one side of mackerel and leave the other side with the backbones intact. The featured fish will be Mackerel and the Japanese name is Saba. Does that ring a bell yet? You probably have seen Saba Shioyaki (Salt Broiled Mackerel) on a menu at a Japanese restaurant.
