Puffy and golden brown, these triangular doughnuts are made with coconut milk and spiced with cardamom. Often eaten alongside pigeon peas, mahamri/mandaze are great treats to make for family gatherings or to enjoy at breakfast.

The ingredients needed to make Mahamri:
  1. Make ready 1 kg all purpose flour
  2. Take 11/2 cups Coconut milk
  3. Take 1 tbsp yeast (shallow)
  4. Get 200 g sugar
  5. Get Cardamom powder
  6. Make ready Lemon /orange zest
  7. Prepare 1 ltr deep frying oil

Mahamris are miniature with a bulging square or triangular dough which is fried until they attain a golden brown hue. Cook on the other side for another minute and remove from the deep fryer with a slated spoon.

Steps to make Mahamri:
  1. Sieve the flour and add the sugar, cardamom powder and lemon zest and mix
  2. Make a hole in the flour and heat a little oil and pour in the hole you made and cover the oil with the flour on top
  3. Put the yeast in a cup and pour in the coconut milk if it can be warm it will raise faster. Beat the yeast in the coconut for it to dissolve (whether it dissolves or not you'll get good results)
  4. Pouring a little mixture of the coconut milk and yeast in the flour make a dough until it's soft
  5. Knead the dough very well for some minutes then divide the dough into small balls. Roll every ball with a rolling pin on a flat surface and cut into desired shapes.
  6. Lay what you cut somewhere and leave it for an hour to raise nicely.
  7. Then heat the oil in a deep frying pan and deep fry the mahamri's
  8. You can serve with soup, coconut beans or coconut mbaazi. My children apply peanut butter and margarine and have them as a snack

The doughnuts should be a light golden brown. For mahamri, yeast is the rising agent of choice. Yeast does have a flavor to it, and it adds to the overall taste of mahamri. For authentic mahamri, use yeast, not baking powder. I also used self raising flour in the past, and it did not taste as authentic.
