Filipino pancit is one of the most favored of current trending foods in the world. It’s easy, it’s fast, it tastes delicious. It is enjoyed by millions daily. Filipino pancit is something that I’ve loved my whole life. They’re nice and they look fantastic.

After always relying on my Filipino neighbors for pancit, I decided to try to make my own. This was the first pancit recipe I tried and I loved it. I made it again using a different recipe (I couldn't find this one again), and it wasn't nearly as good.

To begin with this particular recipe, we have to prepare a few components. You can have filipino pancit using 11 ingredients and 10 steps. Here is how you cook that.

The ingredients needed to make Filipino pancit:
  1. Get fresh green bean (cut approx 1/2")
  2. Prepare shredded carrots
  3. Get cabbage
  4. Take celery (sliced)
  5. Take medium yellow onion (sliced)
  6. Get garlic cloves (minced)
  7. Prepare soy sauce
  8. Make ready Boneless skinless Chicken thighs (cut into bite size pcs)
  9. Make ready organic chicken broth
  10. Get pkgs bean vermicelli
  11. Take rice stick (rice noodles)

Pancit is the word for noodles and to add to the confusion there are different types of pancit, with pancit Canton—egg noodles, pancit Bihon—rice noodles and pancit Miki—thick egg noodles. Pancit Molo is a filipino recipe that makes you wonder why it was called pansit for term "pancit" or "pansit" means noodles but actually the dish didn't use any ingredient of noodles in it's recipe because it uses either wonton, soimai or molo wrappers. Also, most of the pancit recipe are dry while this pancit molo is a soup. Pancit is a popular Filipino dish that typically has a protein (chicken and/or pork), onions, garlic, carrot, cabbage, spices and such and tossed with soaked, thin rice noodles.

Instructions to make Filipino pancit:
  1. Drizzle olive oil into a medium or large size pan on med heat; then saute chicken until it's white (approx 2 min). Set aside.
  2. Clean same pan used for chicken. Drizzle olive oil into pan then saute onions for about a minute then add the garlic until fragrant (approx 30 sec).
  3. Add celery and carrots for about 5 min.
  4. Add green beans and cabbage and cook for another 5 min.
  5. Lower the heat to simmer for the next 20 min.
  6. While the vegetables are simmering, boil approx 2 qts of water in a large pot. Place rice sticks in the boiling water for 3 min. Remove from boiling water and placing in the simmering vegetables.
  7. Place bean vermicelli in boiling water for 3 min. Then drain and place in simmering vegetables.
  8. Gradually add 32 oz of chicken broth to the vegetables and noodles while it continues to simmer to allow for the noodles to slowly absorb.
  9. Add the cooked chicken that was set aside and mix well.
  10. Constantly mix well until the rest of the ingredients are cooked (approximately another 10 min).

As I mentioned earlier, my favorite Filipino Pancit recipe is called Pancit Bihon and it's made with Bihon rice noodles, sometimes called "Rice Sticks." It's a very thin vermicelli noodle made from finely ground rice, just as you would use flour, a ground wheat. This gives them a very light and fresh taste and texture. Heat oil in a wok or large skillet over medium heat. Saute onion and garlic until soft. Stir in chicken cabbage, carrots and soy sauce.
