  1. Prepare 11/2 cups sugar beans
  2. Prepare 75 g oxtail soup
  3. Prepare 1 knorrox
  4. Prepare 2 tbs oil
  5. Take 1 small onion

Pour off the water after soaking and place the samp and bean mix in a large saucepan. Cover with water and simmer slowly until the samp and beans are nearly soft and most of the water has evaporated. (Add extra water if necessary.) Season well with salt. In the meantime sauté the onion and garlic in a little oil until soft. Drain the samp and bean mix (after soaking overnight) and place it in a large pot covered with clean water.

Instructions to make Traditional samp:
  1. Wash the samp and beans well and boil for 5 minutes
  2. After 5 minutes drain the first batch of water then add clear water and let it boil on a low temperature untill it is cooked
  3. In separate pot fry onion and knorrox untill golden brown add oxtail soup
  4. Pour the gravy in the pot and stir untill combined
  5. Serve with any stew

Add more water when necessary and stir it frequently. Traditional African side dish, buttery starch dish made from dried corn kernel's that have been stamped and chopped until broken,the coating around the kernel loosens and is removed. Great side dish to stews, casseroles & grilled meats. Cover the samp and beans with water and let them soak overnight at room temperature. You can usually buy samp at international markets or online.
