Cover and cook the tomatoes until they have softened. Mash them gently with back of the ladle. Now add sugar and stir it in. As sugar gets dissolved, add roasted peanuts and stir it in.

  1. In a pan take oil and heat it for tempering. Add cumin seeds and mustard seeds to it.
  2. When the mustard seeds crackles add the curry leaves, chopped green chillies and chopped onions to it. Cook till onions turns pinkish.
  3. Now add all dry spices. Then add the smashed potato and chopped tomatoes to it. Mix everything properly. Cover the pan and let it cook for about 8-10 minutes.
  4. Once cooked, smash a little the ready bhaji using the back of the spoon. Serve the bhaji with paratha or bread.
