Leave the sprigs in the pan and place a lid to keep the smoke in. The candies nuts will be infused.
  3. Once the nuts have cooled down remove the sprigs and chop the bust to desirable fineness. The crumb is now ready for coating.

Line a baking sheet with parchment paper. Line a baking sheet with silpat or parchment paper, and set aside. The walnuts in the pan on the bottom burned on the bottom. The sheet was in the middle of the oven so that surprised me. We used butter to grease parchment paper in both pans.
