You can put almost anything in an onigiri; try substituting grilled salmon, pickled plums, beef, pork, turkey, or tuna with mayonnaise. Form rice balls with wet hands, using a heaping ice cream scoop of rice for each. Bread the rice balls one by one, dipping first into the flour, then the beaten egg and finally rolling in bread crumbs. Pour breadcrumbs into a pile on one end of a cutting board. While still warm, place in a bowl.
