  9. When the chicken is cooked, add the wine. Let it bubble for a few seconds.
  10. Then add the stock, carrots, potatos and 3 tarragon sprigs.
  11. Cover and leave for about 15 minutes.
  12. When the potatos are mostly cooked. Add the asparagus and cook for a further 5 minutes.
  13. When the asparagus is nearly tender add the cream, additional seasoning and chopped tarragon to taste.
  14. When all the vegetables are cooked. Turn off the heat.
  15. Serve.

Remove the chicken breasts to warmed plates. Bring the remaining liquid to a boil, add the cream and stir well, then sprinkle in the fresh tarragon, stir again and give a good grind of white pepper. Pour the sauce over the chicken breasts, and give a final scattering of tarragon to serve. Return chicken and any juices to the pan. Start by browning the chicken breasts in a large skillet or saucepan.
