Pat chicken skins dry with a paper towel. Stir in the chicken, herbs, lemon juice, crème fraîche and rice. Remove and discard the chicken skin. Tear the meat from the bones and shred into a large bowl. Now roll out the pastry and cut it into four pieces big enough to cover four small pie dishes.
