Add wine and bring to boil. Add to the sauce with the tarragon, mustard and a squeeze of lemon juice, then taste and season. Pour in any resting juices from the chicken, then serve with the chicken supremes, either spooned over on plates or served at the table on a large platter. Stir through most of the parsley and tarragon and season to taste with salt and pepper.

  1. Chop chicken into cubes. Toss in flour and set aside
  2. Chop onion, fry gently in oil. Add chopped mushrooms, cook for a few mins then add a glug of wine. Turn up the heat.
  3. Turn down the heat and add the chicken. Cook for a couple of minutes then add stock, passata, salt, pepper and tarragon. Stir well and simmer very gently uncovered for about 30 mins. Stir every now and then. Serve with crusty bread

To cook the chicken, heat the remaining oil in a heavy, ovenproof frying pan over a high heat. Then add the heavy cream and the tarragon. Then return the chicken to the pan, and baste it several times with the sauce. Serving - Place the chicken breasts on a serving platter, spoon on the mushrooms and sauce, and garnish with minced parsley. In a large skillet, heat butter and oil over medium heat.
