Stir in the broth, salt and pepper; bring to a boil. I was looking for a great butternut squash soup recipe that was creamy with great flavor. I found that I liked elements of many of the ones out there, but none hit the mark. So I created my own in the Vitamix®!

Steps to make Squash Soup:
  1. Pre heat the oven at 150°C on grill.Peal and clean out the squash. Cut in cubes and place on a oiled oven pan or skillet.
  2. Add the onions, garlic & ginger paste, onions leaves, salt and pepper and the jalapeños, mix well and place in the oven for 20mins
  3. In a pan, heat the chicken stock and place the roasted squash in the pan, reduce heat to low and let it cook for 5mins.
  4. You can use a hand held blender or a normal blender to blend the mixture. Place in a sieve and use a spoon to make your work easier.
  5. Place the mixture into a pot and let it boil for 10mins. Serve in a bowl. Add some cream or plain yogurt and garnish with parsley. You can serve with toast or croutons. Enjoy

My husband is an extremely picky eater when it comes to food consistency and he loved it. Is butternut squash soup good for you? Plus, butternut squash is full of vitamins A and C, among other nutrients. If you want to make this soup even healthier, you could stir in Greek yogurt instead of heavy cream to boost the protein.
