The ingredients needed to make Viazi Karai:
  1. Take 7 large potatoes
  2. Prepare 200 g plain flour
  3. Take 200 g bhajia flour
  4. Get 200 ml water
  5. Get 1 medium sized onion, finely chopped
  6. Take 1 bunch parsley, finely chopped
  7. Get 3 chilli, finely chopped
  8. Get 1 Tbsp Dhana Jeera
  9. Take 1 Tbsp fresh curry leaves (optional)
  10. Prepare 2 packets Eno or 2Tbsps of cornstarch (optional) for a crunch
  11. Take to taste Salt
  12. Prepare Oil for frying

Heat oil for deep frying in a karai, wok or kadai over medium heat. Normally, the golden yellow color of viazi karai is gotten by using food color, however i decided to use something organic for the color and turmeric was befitting for this. Remove your potatoes from the boiling water and slice them, discard the boiled onion, garlic and rosemary. Second difference between viazi karai and bhajia is: All purpose flour is used for the viazi karai batter while garam flour is used for the bhajia batter.

Instructions to make Viazi Karai:
  1. Peal and cut the tomatoes into cubes. Boil in salty water until slightly tender.
  2. In a bowl, mix the rest of the ingredients into a paste. The paste shouldn't be too thick or too light.
  3. Heat the oil in a frying pan on medium heat. Deep the potatoes into the paste, coating the whole potato and fry until light brown
  4. Serve with a lettuce salad or coconut/tamarind chutney
