Heat oil for deep frying in a karai, wok or kadai over medium heat. Normally, the golden yellow color of viazi karai is gotten by using food color, however i decided to use something organic for the color and turmeric was befitting for this. Remove your potatoes from the boiling water and slice them, discard the boiled onion, garlic and rosemary. Second difference between viazi karai and bhajia is: All purpose flour is used for the viazi karai batter while garam flour is used for the bhajia batter.

Instructions to make Viazi Karai:
  1. Peel and chop the potatoes into cubes then place in boiling salty water for 6 minutes
  2. Drain water after boiling process then put aside
  3. Put all the dry ingredients into a clean bowl (flour, salt, spices, turmeric, black pepper, parsley) and mix together
  4. Add water into the mixture slowly until it is a thick pancake batter-like mixture
  5. Add potatoes one by one into the batter and mix them with the batter till fully covered
  6. Add oil halfway into a pan and let it heat on medium heat
  7. Use a spoon to add the battered potatoes into the oil making sure they are fully covered
  8. Fry both sides for 2½ minutes
  9. Drain extra oil and place into a hotpot lined with kitchen towels to seep in the extra oil
  10. Serve hot with tomato sauce, meat stew or veges of your choice 😋
