Githeri is the staple food of the Gikuyu, Meru and Embu people in the Central Province of Kenya.

Steps to make Githeri:
  1. Put oil in a sufuria and add in onions. Fry until lightly brown. Peel the potatoes and divide them into medium sizes.
  2. Then add in tomatoes and stir very well. Let it cook until soft.
  3. Add in parsely. Mix in the parsely well enough. Then add - carrots and the peeled potatoes.
  4. Mix in the peeled potatoes.
  5. Add in the mixed beans and maize. Add in salt to taste.
  6. Cook for 15 minutes then serve. It is eaten best with strong tea

It is however eaten all over Kenya and is also know as Mutheri among some Kenyans. This typical kenyan stapple food consists mainly of beans and mais, but can be served with some extras.
