Also known as pakoras, these bhajias are the perfect snack for a cold, rainy day. Make up a batch, and serve them with sweet and sour tamarind chutney. Bhajia was a gavourite snack growing up.

The ingredients needed to make Bhajia:
  1. Get Potatoes
  2. Take Cooking oil
  3. Get Salt
  4. Make ready Tumeric
  5. Get leaves Parsley
  6. Take Basil

Peel and chop the potatoes very finely. Place in a bowl, cover with cold water, and leave until ready to fry. To make the batter, mix the chickpea flour, turmeric, chili powder, pepper, salt bicarbonate of soda, chillies, and coriander. Bhajias are a fantastic snack and are loved the world over.

Instructions to make Bhajia:
  1. Peel your potatoes. In a bowl of mixed parsley and basil drop the potatoes, add a few drops of tumeric and salt and stir to mix so that each piece is coated. For a few minutes let them dry out to drain excess mix.
  2. Heat oil in a deep spacious sufuria, when heated up carefully add the potatoes and let cook till they are crispy as desired. Serve and enjoy.

They are extremely popular in Kenya (and East Africa in general) such that any restaurant worth its salt just has to have them on. Some of the best bhajia in India are sold on station platforms and indeed on the train itself. As soon as the train pulls into a mainline station, hordes of 'bhajia-wallah' will mount with their various flavours closely followed by the tea vendor or 'chai-wallah'.
