  6. Return the chicken to the pan and bring to the simmer. place a lid on the pa n and continue to cook allowing the sauce to just simmer for some minutes until the meet is completely tender
  7. To finish remove the chicken, place into a plate or lid and keep in a warm place eg side if a oven or any source of heat. Skin the sauce of any further excess fat and adjust the consistency of the sauce if necessary
  8. Adjust the seasoning before adding the tomato… Place the chicken into the sauce and scatter some chopped parsley before serving
  9. Serve and Enjoy
