  1. Peel, wash and slice potatoes
  2. Wash and chop onions and capsicum into small cubes
  3. Put some oil in the cooking pan and add the chopped onions then stir and let it cook on medium flame for about 2min
  4. Add the chopped capsicum and allow it to cool for 2min
  5. Add the sliced potatoes and stir. Cover your cooking pot and allow the potatoes to cook for 7-10 minutes.
  6. Using a wooden spoon stir the potatoes and add some water and allow it too cook for 2min
  7. Add the parsley leaves, curry powder, salt and red chills then stir
  8. Add the homemade tomato paste and cook for 5min
  9. Your yummy wet fry potatoes is ready.
  10. Serve with chapati /rice /ugali/spaghetti.you can as well it is plain very delicious and appetising

I poked mine with a fork all over and microwaved it for a minute or so to make it easier to slice (leave skin on). Serve with a dollop of sour cream for an extra kick.
