The tomato rice is slightly spicy. To reduce the spiciness, just use less amounts of ginger-garlic paste, black pepper and red chilli powder. Steps to make Tomato rice:
  1. Soaked the rice for 1 hour. Make a fresh tomato juice from all the tomatoes and keep it handy.
  2. Chopped onions. Make a paste of half chopped onion with, ginger, garlic, chillies and grated coconut.
  3. Then add cuming, coriander and red chilli powder and salt in the onion paste.
  4. Now in a pressure cooker add ghee/oil. Then add curry leaves, bay leaf, cardamom, cinnamon, mace, star anise and cloves. Mix all.
  5. Then add chopped onion and fry till golden brown. Then add the tomato paste and the onion paste and fry for another 10 minutes in medium flame.
  6. Now add the rice and water. Water quantity should be equal with rice. 1 bowl rice and 1 bowl water. Mix all and close the lid. Give 1 whistle to the cooker and the rice is ready.
