  7. After 20 minutes, open your oven and remove the aluminium foil covering. Add in your sliced onion and bell pepper plus your thyme sprigs evenly distributed on the tray.
  8. Drizzle the remaining oil on the potatoes. Finally return the baking tray in the oven and let it cook for the next 20 minutes until the potatoes are ready.
  9. Finally remove the potatoes from the oven, remove the thyme sprigs and serve with your favourite drink.
