The ingredients needed to make Viazi karai:
  1. Take 3 large potatoes peeled and diced to your preferred size
  2. Prepare 1/2 cup flour
  3. Get 1/2 teaspoon paprika
  4. Make ready 1/2 teaspoon black pepper
  5. Take 1/2 tspn tumeric
  6. Get 1/2 tspn yellow food color
  7. Take 1/4 cup water
  8. Get to taste Salt
  9. Get Enough Oil to deep fry

Heat oil for deep frying in a karai, wok or kadai over medium heat. Normally, the golden yellow color of viazi karai is gotten by using food color, however i decided to use something organic for the color and turmeric was befitting for this. Remove your potatoes from the boiling water and slice them, discard the boiled onion, garlic and rosemary. Second difference between viazi karai and bhajia is: All purpose flour is used for the viazi karai batter while garam flour is used for the bhajia batter.

Steps to make Viazi karai:
  1. Boil your potatoes with salt till half cooked. Remove, drain the hot water and soak in cold water to prevent them from cooking further.
  2. In a bowl mix all the other ingredients except for the frying oil.
  3. Add water to the flour and spices mixture and make it to a thick paste. Add some yellow food color
  4. Heat the frying oil till very hot (if you want to know if your oil is hot, dip a wooden stick (mwiko) into the oil. If it bubbles it's ready)
  5. Gently soak your potatoes thoroughly into the spicy paste and coat well. Remove from paste and deep fry till crispy to your liking.
  6. Serve and enjoy with some chilli, vinegar or tomato sauce.
