  3. Add eggs one by one to the mixture and mix.
  4. Add lemon juice, vanilla essence and food color and mix thoroughly.
  5. Sieve the flour, baking powder and salt then add to the mixture then mix at a high speed
  6. Now add milk and mix till you get a fluffy mixture.
  7. At this level grate the lemon rind and mix with the raisin in to the mixture.
  8. Pour the mixture into the greased tin and bake for 20mins.

Whisk the flour, sugar, sesame seeds (if using), baking powder, and salt with the lemon zest. These lemon crumb muffins make such a nice breakfast or snack! Moist, tender, & citrus-y, with a thick layer of buttery streusel on top. It's a gorgeous Tuesday afternoon, and my kids are officially DONE with the school year! I'm so looking forward to long, lazy summer days.
