Instructions to make Mixed muffins:
  1. Preheat Oven to 180 Degrees Celsius. Grease and dust your muffin tin.
  2. Make your rice flour by placing the uncooked rice in a grinder and grind to a smooth powder. Empty into a mixing bowl. Add in the rest of ingredients in set 1 and whisk to a smooth batter.
  3. In another mixing bowl, whisk the eggs til fluffy. add in the flour whisking to a smooth batter. add in the eggs, oil and the margarine. mixt till well combined. mix in the color.
  4. Scoop the rice mixture into the greased muffin tin then top up with the flour batter.
  5. Bake in the preheated oven for 25 - 30 minutes.
  6. Allow to cool before serving.

I'm adding to my baking basics series with a plain muffin recipe that is great as it is or flavored with your favorite mix-ins. Try making cranberry orange muffins with this recipe.
