A twist on Greek Moussaka By Stuart in Recipe; Moussaka is a dish that has it's origins in the Eastern Mediterranean, the Balkans and the Middle East, but the classic Greek representation of Moussaka is a fairly modern invention. Arrange the aubergine slices on two large baking sheets and brush with half the oil. This moussaka is mostly authentic with a couple of twists for added flavor. Traditional moussaka uses ground lamb while most modern versions use ground beef. I took culinary license to add the additional twist of halving the ground beef with mild ground sausage.

Steps to make Moussaka with a twist:
  1. Turn on oven to 180 degrees.
  2. Slice aubergine and sprinkle with salt. Leave to one side.

  11. Bake in oven for 30 mins at 180 degrees.
  12. Serve with Greek Salad.

This added a wonderful flavor dimension to the dish. The epitome of Greek comfort food, moussaka is basically a hearty eggplant casserole with a juicy, flavor-packed meat sauce. Topping the meat is either a rich bechamel sauce- a French influence that was introduced later-or, as in today's Moussaka recipe, a cheese-based topping. Second, it calls for way too much onion and eggplant. Foodie Sally reveals her top tips for how how to make moussaka with a little twist to give it something a little extra.
