Onion Githeri is one of the most favored of recent trending meals on earth. It is easy, it is fast, it tastes delicious. It is appreciated by millions daily. Onion Githeri is something which I’ve loved my whole life. They’re nice and they look fantastic.

Githeri is a corn and bean one pot meal which originated from the Kikuyu tribe of Kenya. It is also known as muthere or mutheri. It is traditionally prepared with dry beans and corn, however, to prepare this amazingly delicious recipe, I used canned beans and frozen corn for ease and convenience; so, it is perfect for those times when you need to whip something healthy up quickly.

To begin with this recipe, we have to first prepare a few ingredients. You can cook onion githeri using 5 ingredients and 4 steps. Here is how you can achieve it.

The ingredients needed to make Onion Githeri:
  1. Prepare 2 cups boiled githeri
  2. Prepare 2 large onions sliced
  3. Take oil to fry(2tb)
  4. Get beef cube 1
  5. Get salt and black pepper

Githeri is a traditional kenyan dish of which the name derives from the Kikuyu people of Kenya. It is however eaten all over Kenya and is also know as Mutheri among some Kenyans. This typical kenyan stapple food consists mainly of beans and mais, but can be served with some extras. Githeri has just a few ingredients, and in order to ensure it has the best flavor, I highly recommend that you do not skip sautéing the onions and garlic and spices.

Steps to make Onion Githeri:
  1. Heat the oil in a saucepan then add the onions and saute for 3-5 min on low heat until soft.
  2. Add the githeri, beef cube and season. stir to ensure all the ingredients mix well.
  3. Add 1/2 cup water and simmer for 10 mins. serve hot.
  4. Can be served with avocado on the side

This step brings out flavors that you will not find if you toss it all into the slow cooker and call it good. Githeri is one of the main staple foods in Kenya and a personal favourite too. It is such a simple dish made out of beans and maize but so wholesome, comforting and filling. My recipe is a classic githeri with a slight twist. I add peanut butter to give it that nutty taste and it just works so well.
