This dish can be made with or without the meat. "Groundnut Sauce" is basically peanut sauce. Groundnuts are what Africans call peanuts. To make the matoke authentically, you must peel the bananas, wrap them up in banana leaves and steam for a couple hours over a "double boiler" setup.
