Jamie Oliver's chicken laksa recipe is a punchy, flavour-packed, coconutty corker of a dish. Heat the oil in a wok over medium heat. Add the coconut milk, stock and water and bring to the boil.

  1. Get 1/2 BBQ Chicken (roughly shredded)
  2. Make ready 1 cup Vermicelli Noodles
  3. Take 1/3 cup Laksa Paste
  4. Get 1 cup Fresh (or canned) Bean Sprouts
  5. Get 1/3 cup Bamboo Slices
  6. Get 1 tbsp Vegetable oil
  7. Get 2 tbsp Fresh Coriander Leaves
  8. Make ready 370 ml Light Coconut Milk
  9. Take 3 cup Chicken stock
  10. Prepare 1/2 Cucumber (finely sliced)
  11. Make ready 1 tbsp Palm Sugar or Brown Sugar
  12. Make ready 1/2 Lime (cut into wedges)
  13. Take 2 Shallots (sprigs not bunches)
  14. Make ready 2 tsp Fried Shallot (optional)

This milky chicken and noodle laksa is full of Malaysian flavour! With chilli, turmeric, lime and coriander, it's a perfect way to warm up a winter's night. Drain noodles and divide them between serving bowls. Arrange two egg halves on top of each and divide the laksa soup between the bowls.

Steps to make Chicken Laksa:
  1. In a large frypan or wok, heat up the oil until very hot
  2. Add laksa paste and fry for roughly 30 seconds or until fragrant. Add sugar and chicken stock and bring to the boil.
  3. Meanwhile put Vermicelli noodles in a heat resistant bowl and pour boiling water over the noodles so they are covered with the water. Cover and let it sit in the water while you finish the Laksa.
  4. Once then stock, sugar and laksa paste have come to a boil add the chicken, coconut milk, bamboo and bean sprouts and turn it down to a medium heat and cook for a further 5 mins.
  5. Once the laksa is done, drain the noodles and devide them into bowls and ladle in laksa mixture. Top with cucumber, coriander,shallots and a wedge of lime.
  6. I also like to garnish with some some fried shallots to add a cruchy texture!

Put the chicken in a large saucepan with the coriander seeds, ginger, lemongrass, lime zest and a little salt. Chicken - I love making this with drumsticks or bone in skin on thighs because the flesh that falls off the bone looks and tastes like the chicken in Laksa that is served at proper Malaysian joints. Also the chicken skin adds richness to the broth. It can be made with chicken breast and boneless thigh, poached per recipe and sliced, but the broth flavour isn't quite as good.
