In place of chicken stock I used Swanson Vegetable stock since I was serving this to some vegetarian guests. You can use any combination of your favorite vegetables. The sauce can be made ahead of time, so you can easily just stir-fry the veggies and add in the sauce. Vegetable stir-fry is a quick and easy Chinese dish.
