Boil the potatoes in a pan of salted water for eight minutes until just tender, then drain well. The recipe calls for whole spices, dry roasted in a skillet, then cooked in oil. That way, every ingredient that touches the skillet becomes infused with the fragrant mix of cinnamon, clove, and cardamom.

  2. Prepare Peas

  6. Serve with chapos or rice

A great tasting curry from scratch will always call for a fair few spices. Add the onions to the pan and saute until they are tender and a bit golden.
