  3. Add the tomatoes, salt and peper. Simmer for 10 minutes.
  4. In a pot, melt the butter over medium heat.
  5. Whisk the flour into the butter and cook for 2 minutes till mixture is thickening.
  6. Turn to low heat and add milk 1 cup at a time into the butter and whisk to keep thickness. Stirring constantly.
  7. Add salt and pepper to taste and simmer for 5-10 minutes.
  8. Take off heat and whisk in cheese till melted.
  9. Preheat oven to 180’C.
  10. Prepare oven dish and oil with cooking spray or butter. Always start with one layer of white sauce.
  11. Layer in the following order: white sauce, lasagne, pumpkin, cheese, mince and spinach. Repeat for 3 layers.
  12. Note: do not overlap the lasagne sheets. Break in half to fill caps.
  13. End with thick layer of white sauce and sprinkle with cheese, parsley and black pepper.
  14. Bake for 40 minutes.
  15. Cover with foil and rest for 15-30 minutes till set.
