Steps to make Italian meringue:
  1. Mix together the water and sugar in a saucepan, heat until soft ball stage 118°C
  2. Just as the sugar reaches 115°C start whisking the egg whites in the machine
  3. When the egg whites have turned light and white slowly pour the sugar into the whisking egg white
  4. Whisk in the lemon juice, continue whisking until cooled pipe out and bake

It can be used for smooth buttercream icing and crisp but chewy meringue nests. You will need a sugar thermometer.
