  1. Prepare For the curry paste
  2. Take 1cup Red chillies soaked in warm water for an hour

  13. Prepare 1/2 cup Vegetable stock (To adjust consistency)
  14. Take 1 tbsp sugar
  15. Take 1 pkt Rice Noodles cooked as per instructions
  16. Prepare 1 bowl Julienned Veggies like carrots, beans, Zucchini,Baby Corn
  17. Prepare to Taste Salt
  18. Make ready 2 tbsp oil
  19. Make ready For Garnishing
  20. Prepare As required Chopped Spring Onions
  21. Get As required Toasted Peanuts
  22. Get As required Lemon Wedge

This is the kind of noodle soup I could eat for breakfast, lunch and dinner because it contains so many of my favorites ingredients; coconut milk, red curry paste, curry powder, chili paste, palm sugar, noodles, lime and cilantro. Not only did we sample vegan laksa whilst working in Melacca. From vegan fish head soup to vegan congee we were spoilt for choice with veganised national dishes galore! This incredible dish is a combination of a Chinese noodle soup, a rich coconut broth with Indian spices, plus chilli and paprika influenced by the Portuguese.

Instructions to make Vegetarian Laksa:
  1. Boil Noodles as per package instructions and drain water. Set aside.
  2. Add the ingredients of the curry paste into the blender and grind to a smooth paste.
  3. Steam the Julienned Vegetables until Al Dente and Drain the water.
  4. Heat oil in a pan. Add the curry paste and cook till it releases oil. Now slowly add the coconut milk stirring continously. Add vegetable stock to adjust the consistency. Now add the salt, sugar, kafir lime leaves and bring it to a simmer on low flame.
  5. Take a bowl. Plate a layer of the Noodles, the steamed veggies, and pour the curry over the noodles to the brim. Top with spring onions and peanuts and serve warm with a lemon wedge.
